Egg Roll Meets Fried Rice in a Bowl




This quick and easy mashup of everyone's two favorite Chinese takeout foods will have you begging for more! Egg rolls and fried rice make the perfect simple midweek dinner all cooked in one pan and served in a bowl.


Egg Roll Meets Fried Rice in a Bowl





Preparation Time 5 minutes
Cook Time 15 - 20 minutes
Yield 6 - 8 servings

Ingredients

  • 4 cloves garlic
  • 1 tablespoon minced or powder ginger
  • 4 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon butter
  • 3 eggs
  • 1-2 lbs shrimp, chicken, or pork
  • 1 small onion
  • 1 small head shredded cabbage
  • 1 1/2 cup carrots
  • 6 cups cooked and chilled rice (brown or white)
  • Chopped green onion, as a garnish


Directions

  1. In a small bowl, combine garlic, ginger, soy sauce, oyster sauce, and 1 tablespoon of sesame oil. Set aside
  2. In a large skillet, heat butter and add eggs. Scramble eggs until cooked, remove from pan, and set aside.
  3. Add meat to the pan and cook through
  4. Add remaining sesame oil and onion. Cook until onion is softened.
  5. Add cabbage and carrots. Cook until cabbage wilts and carrots are soft.
  6. Stir in set aside sauce and cook for about 1 minute
  7. Add rice and combine thoroughly to make sure sauce coats all of the rice. The rice will turn a brownish color
  8. Garnish with green onions and serve!



To save on prep time, you can purchase a bag of mixed coleslaw instead of shredding the cabbage and carrots yourself. Peas are also a delicious vegetable to add to the mix!

You can always add or reduce the sauces and seasonings as you like to taste.

For an added kick, add sriracha for a little heat
