Cherry-Lemon Bread Recipe

I just absolutely LOVE Lemon Bread! 🍋🍋🍋

Adding the sweetness of cherries 🍒 to this delicious tangy bread is just the perfect pairing!

This is a great breakfast bread or a companion for afternoon tea ☕

Cherry-Lemon Bread


Ingredients

3 large eggs
1 cup granulated sugar
1 cup (8 oz) sour cream or Greek yogurt
1/2 cup vegetable oil
2 tablespoons lemon zest
1-2 tablespoons lemon extract (not lemon oil or juice), to taste
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt, to taste
10 oz jar of cherries, drained

Directions


  • Pre-heat oven to 350
  • Spray 9x5 in loaf pan with floured cooking spray, or grease and flour
  • In a large bowl, add eggs, sugar, and yogurt. Whisk until smooth and completely combined.
  • Add oil while continuing to whisk
  • Stir in lemon zest and lemon extract
  • Add flour, baking powder, and salt. Stir until just combined. Do not over mix, some lumps will be present
  • Stir in cherries
  • Pour mixture into pan. Bake 50-55 minutes or until toothpick inserted comes out clean
  • Cool loaf completely before adding a lemon sugar glaze (see sugar glaze recipe)
